A warm and comforting vegetable soup loaded with seasonal produce and herbs—perfect for healthy lunches or cozy dinners. Easy to make, full of flavor, and endlessly customizable.
Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, and celery. Cook for 5–6 minutes, until softened.
Stir in potato, zucchini, green beans, diced tomatoes (with juice), and vegetable broth. Add thyme, basil, salt, and pepper.
Bring to a boil, then reduce heat to low. Cover and simmer for 20–25 minutes, or until vegetables are tender.
Stir in peas/corn and leafy greens (if using). Simmer another 5 minutes until everything is heated through and greens are wilted.
Ladle into bowls, garnish with fresh parsley, and serve with crusty bread or crackers.
